Codfish with Brown Sauce


1 lb. salt cod          
1 clove garlic, crushed and minced
6 Tbsps. cooking oil
1 Tbsp. minced parsley
3 Tbsps. flour
            Few grains nutmeg
1 ½ cups water      
¼ tsp. paprika
Soak fish in cold water over night. Drain and fry in oil until slightly browned. Add flour and brown. Add water and seasonings, and cook slowly for fifteen minutes. Serve fish on platter surrounded by border of rice or potatoes.
