3 cups potatoes
2 Tbsps. flour
6 Tbsps. bacon fat
2 cups milk
2 cloves garlic
1 tsp. salt
2 Tbsps. parsley
1/8 tsp. pepper
½ tsp. paprika
Wash, pare, and cut potatoes in dice; then sauté in the bacon fat until brown. Remove potatoes and sauté the minced garlic and parsley in the fat remaining in the pan. Add flour, milk, and seasonings, and cook until thickened (about five minutes). Add potatoes and cook three minutes.
