Spinach a la Rhine



½ Tbsp. diced onion        
            Salt and pepper
½ Tbsp. fat              
3 ½ Tbsps. grated cheese
1 qt. spinach                                  
3 eggs
1 Tbsp. flour                                               
6 cooked shrimps
1 cup milk
Cook the onion in the fat, add the spinach, which has been washed and diced, and fry quickly. Add flour, to make a roux, then add milk, and cook until it thickens. Season with salt and pepper and add the grated cheese. When it starts to boil remove from the fire and add well-beaten egg-whites, then the beaten yolks, turn into a baking-dish and bake in a very hot oven (450-500 F.) for ten minutes. Garnish with shrimps.
