Pastitsio- Baked Macaroni with Ground Beef


1.    In a skillet in ½ cup butter sauté 2 medium-sized onions, finely diced and 1 lb. ground beef for 2 to 3 minutes over medium heat, stirring constantly.
2.    Add 1 medium- sized tomato, peeled and diced, and salt and pepper to taste. Lower the heat, and sauté the mixture for a few minutes, covering the pan if the mixture too dry.
3.    Mix in ½ cup grated Kefalotyri; or parmesan cheese.
Prepare and drain 1 lb. macaroni. Put half the macaroni in a baking dish, cover with the meat mixture, and top with the remaining macaroni.
 Combine 1 cup rich Veloute sauce with 1 beaten egg and ¼ cup Kefalotyri or Parmesan. Adjust the seasoning and             pour the mixture over macaroni. Bake the Pastitsio in a moderate oven (350 F.) for 40 to 50 minutes, or until the cheese melts and the topping browns.
