Old-Fashioned Rice Custard


 No 1.
½ cup uncooked rice       
1 1/2 tsp. grated lemon rind
3 eggs beaten                    
1/2 cup raisins
½ cup sugar                        
3 ½ cups milk
1 tsp. vanilla extract       
Nutmeg
Cook and drain rice. Mix with remaining ingredients, except nutmeg. Pour into shallow baking dish, and sprinkle with nutmeg. Set in pan of hot water and bake in slow oven, #00 F. about 1 ½ hours. Serve warm or cool Servers 6.
No. 2
6 eggs
3 cups milk
1 cup sugar
1 tsp. vanilla
½ tsp. salt
1½ cups cooked rice
1 cup light raisins 
Break eggs into a 2 quart buttered casserole; beat slightly with a fork. Add milk, sugar, vanilla, and salt. Blend well. Stir in the rice and raisins. Set in a pan of water, and bake, uncovered, at 350 F. for one hour and fifteen minutes, stirring once after one-half hour of baking.
