¼ lb. lean ham
¼ lb. grated cheese
2 Tbsps. flour
3 eggs
2 cups milk
Salt and pepper
Cook the ham and dice it fine. Mix the flour with the milk and cook for a few minutes; then add the ham, cheese, egg-yolks slightly beaten, and the stiffly beaten egg-whites. Season with salt and pepper, pour into a mould, set the mould in a pan of hot water and bake in a moderate oven (375 F.) until firm (20-30 minutes). Serve with a garnish of orange slices, with pear halves filled with mint jelly and topped with cherries.
