Sweet and Sour Shrimp No-2


YIELD: 3 to 4 servings if served alone
1 lb. shrimp (raw, weighed with the shell)
Marinade    
½ egg white
1 Tbsp. sherry                                                                    
2 tsps. tapioca starch
1/4 lb. snow peas
1 medium-size red pepper, cubed
2 green onions (white and green parts)
1/2 cup water chestnuts                                   
1/4 cup bamboo shoots                         
1/2 cup fresh pineapple                         
Sweet and Sour Sauce
3/4 cup chicken stock                             
3 Tbsps. honey                                                      
3 Tbsps. wine vinegar                             
1 Tbsp. Chinese red vinegar                 
1 Tbsp. rice vinegar                     
1 Tbsp. dark soy sauce                           
1 Tbsp. chilli sauce                                              
1 clove garlic minced
Binder
1/4 cup pineapple or orange juice     
1 Tbsp. tapioca starch
Garnish
1/4 cup pine nuts - stir-fried 30 seconds, in 2 Tbsps.  peanut oil, drained and salted
Proceed as in recipe NO. 1
